About Peconic Escargot
The story of Peconic Escargot begins in 2013. Taylor Knapp was working as a chef on the North Fork of Long Island and striving to source the restaurant's ingredients seasonally and locally. He wanted to create an escargot dish - something really special. He knew that escargot was available in cans and frozen, but was already going through such lengths to gather all his other ingredients fresh, from local sources. He started the search for local fresh escargot.
"Is there anyone in New York I could buy fresh snails from?" Nada.
"Ok, how about the East Coast?" Zip.
"Alright, how about from the U.S.?" Again, nothing. They didn't exist.
"And then it dawned on me...these chefs, the best chefs in the country, are sourcing these incredibly fresh fruits and vegetables. Seafood caught that morning. Free range chickens and grass fed beef... And then they're opening up a dusty old can of snails. That just doesn't make sense."
As a last ditch effort, Taylor reached out to a former chef to see if he had any ideas. He didn't, but jokingly suggested Knapp raise them himself. He got to thinking (which usually spells trouble) and that was the moment Peconic Escargot was born.
It's been a long road to get to where Peconic Escargot is today. Miles and miles of red tape and the enormous task of building a business without precedent or a road map.

The snails:
Our snails are a heritage French species called Petit Gris or Little Grey Snail known for their exquisite flavor and tenderness. The petit gris are smaller than your typical canned snail - but that's a good thing! These are the bay scallops of the snail world - sweet and tender. This species was first introduced to North America when it was brought over from Europe in the 1850's
The location:
Peconic Escargot is located in beautiful Cutchogue, New York - on the North Fork of Long Island. Our greenhouse operation provides the snails with fresh air and natural sunlight. Because of the controlled environment, we're able to bring you a consistent product year round.
The diet:
The snails are raised on a diet of wild foraged greens like dandelion, burdock, clover, sorrel, and others. After all, if they were in the wild, that's exactly what they'd be eating. Why feed them anything else? Once the snails are ready for processing, they're finished on a diet of herbs like mint, basil, and tarragon. Those herbs become prominent nuances in the snail's ultimate flavor profile.
Why fresh snails?
Peconic Escargot is sold to you fresh, never canned or cooked.
High heat processing makes the snails tough and rubbery and can lead to loss of nuanced flavors. Often additional sodium is added for preservation. No bueno. Peconic Escargot is a completely raw product - ready to prepare however you choose.
