Camilla believes in a chef-driven perspective to agriculture - a "from seed to stem" process of cooking, celebrating earthly stability, composting, and reducing waste.

The Westbourne focus is communal living with a laidback, yet intentional drive. Camilla advocates for the idea of community and of protecting nature. She is a co-founder of ROAR (Restaurants Organizing Advocating Rebuilding) and a founding member of the IRC (Independent Restaurant Coalition).
