What the Pitmasters need to know
- Start arriving at 6am with all meats unseasoned and in a sealed container; you supply the meat
- Meat will be inspected at check in
- Fire up the cookers at 8am; gas can be used to start your grill, but must be shut off after lighting
- Cooking material is wood, charcoal or pellets only; no gas cookers allowed
- The categories are: Ribs, Chicken (your choice on what exactly to cook), Tri-Tip and a dessert
- You must use a Boathouse Bros Oktoberfest style beer in your cook in some capacity
- You must have enough product for 6 judges AND People's Choice (ribs only)
- People's Choice: **UPDATE** People's Choice will now be $1 per bone for ribs. They give you a ticket, you give them a bone! The tickets will be collected at 5pm and the winner announced at awards. Please ensure you have plenty of ribs cooked. This portion is all about taste, not presentation!
- Any leftovers can be taken by you, or we can collect and donate to a local food bank!
- Trophies and Prizes: Grand Champion $500 + trophy; Reserve GC $250 + trophy; 1st in each category $250 + trophy, 2nd in each category $125 + trophy; People's Choice $125 + trophy
- Amateur cooks only
- If you need a generator, you must provide it
- Turn in as follows: Ribs: 3:00; Chicken: 3:30; Tri Tip 4:00; Dessert 4:30. Awards at 6:00pm.
- 10 minute window to turn in. If you are not in line at the alarm, you will forfeit that category
- Each team will be provided approximately a 20'x20' space
- Teams are required to have a fire extinguisher
- Teams are required to adhere to accepted food service standards, which includes washing and sanitizing.
- Teams will need to bring their own tables, tents, cooking equipment, etc.
