Local Executive Chef Justin Dumcum, with Lettuce Entertain You (experience at Mon Ami Gabi, RPM Italian, RPM Steak and many others) will curate a personalized dining experience. Executive Chef Dumcum's bio:
Born in Springfield, MO., and raised in St. Paul, MN., Dumcum knew at a young age that he belonged in
the kitchen. Growing up in a household that often used ingredients from the backyard garden and
frequently took strawberry and apple picking trips, Dumcum credits his mother for providing him with
the inspiration and desire to become a chef.
In 1988, Dumcum graduated from the Hotel and Restaurant Cookery program at St. Paul's Technical College in Minnesota, and shortly after, took a position as chef de cuisine at North Oaks Golf Club in Minnesota. In 1994, Dumcum became the sous chef at the Saint Paul Hotel in Minnesota. During this time, he started to work for Restaurant's Unlimited, Inc., and later became the executive chef at the Kincaid's Fish, Chop, & Steak House in Norfolk, VA. In 2005, Dumcum was transferred to Palomino in Cincinnati and served as the restaurant's executive chef. After working for Restaurant's Unlimited, Inc. for seven years, Dumcum became the executive chef of the South Beach Grill at The Waterfront, in Covington, Ky., one of seven properties managed by the Jeff Ruby Culinary Entertainment Group. It wasn't long before he became the executive chef and operating partner of The Oceanaire Seafood Room in Cincinnati in 2007.
In September 2009, Dumcum moved to Chicago and became a part of the Lettuce Entertain You
Enterprises team, taking the executive chef position at French restaurant Mon Ami Gabi, located in Chicago's Lincoln Park neighborhood. After three years, he was asked to be part of the opening team at RPM Italian. Dumcum was involved in the openings of Paris Club Bistro & Bar, Ramen San, Il Porcellino, RPM Steak, RPM Italian DC, Sushi San, Windy City Smoke Out, and Bub City.
