The design of this carving knife is based on a Kansas deboning design produced from the late 1800s up to WWII, when the company went out of business. It was a very popular knife with professional meat cutters and remains so, when one can be found. Dr. Miller builds this knife now for chefs for use on carving stations. The blade is CPM154 stainless steel. The handle material is Birdseye Maple burl, courtesy of Dr. David Ramsey, that has been stabilized. A kydex sheath protects the blade.
