0Jerusalem Artichoke (Helianthus tuberosus)
Jerusalem Artichoke (also called sunroot, sunchoke, earth apple and topinambour) is a species of sunflower native to eastern North America. Plants can grow to 6' and are covered with bright two-inch flowers in late August and September. Jerusalem artichoke was an important food plant for Native Americans because of its edible tuber which grows underground, much like a potato. It is highly nutritious, has a sweet, nut-like taste, and can be eaten raw, boiled, or roasted. The plant attracts bees and butterflies while providing cover for wildlife. The seed heads attract birds.
