Protector Cellars, located in Paso Robles California, is the world's first "beyond carbon neutral" winery, meaning that they actually capture more greenhouse gas emissions than they release in the entirety of their operations.

After a decade of making wine in California, and seeing the effects of climate change first-hand on his agricultural industry, founder Alex Katz discovered that he could reduce the carbon footprint of his wines, while simultaneously improving their quality. "All of our grapes are grown on certified sustainable vineyards, which means managing energy, fertilizer, and water use. It also means measurably reducing our impact on the environment, which has the added effect of producing higher quality wine grapes with the potential for more complex, balanced wines."

Producing the wine in cans instead of glass bottles, not only reduces the winery's emissions, but also removes the threats of cork taint and light strike, that can negatively impact the aromas and flavors of traditionally-bottled wines. The container also makes it much easier to enjoy the wine outdoors, whether at the beach, backyard bbq, or a picnic in the park.

Wine Enthusiast 40 under 40, Blaine Ashley, calls Protector Cellars a "Beautiful product - in taste, packaging, story, ethos." The Sauvignon Blanc, Rosé, and Cabernet Sauvignon each find a balance of fruit, depth of flavor, and brightness that can be paired with a wide array of foods. Paso Robles Wine Country is an American Viticultural Area located in the San Luis Obispo County, California. It has approximately 33,000 vineyard acres planted with wine grapes, and is well known for its heritage varietal Zinfandel, Cabernet Sauvignon, and Rhône-style wines.
