Banana Bread
- 3-4 very ripe bananas
- 1/2 cup (1 stick) melted butter
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- Optional: Add a cup of rough cut pecans
Preheat oven to 350°F. Grease an 8½ x 4¼-inch loaf pan.
Mash bananas in a bowl, then add all the other ingredients and whisk to combine.
Pour batter into prepared loaf pan and bake for 50-60 minutes, or until a knife inserted into the center of the cake comes out clean. Let the cake cool for 15 minutes on a wire rack, then turn it out from the pan and let it cool completely.
