Born in Connecticut, Chef Paul Kostandin spent his formative years enjoying the bounty of both the Mid-Atlantic and New England regions. From a young age, he expressed a passion for food and cooking, spending many afternoons in one of his grandmother's kitchens, he found a love for turning raw ingredients into the building blocks of the evening meal. After spending four years at Johnson & Wales University, Chef Kostandin graduated in 2009 with degrees in Culinary Arts and Dietetics. He then returned home to the Mid-Atlantic and spent the next few years in kitchens in Delaware and Pennsylvania until landing in the kitchen at Birch & Barley in Washington D.C. under the direction of Chef Kyle Bailey. During his time at Birch & Barley, he developed a passion for whole animal butchery, handmade pasta, bread making and fermentation. Throughout his career, Chef Kostandin has been blessed to work with a steady supply of locally produced agriculture, and it is these relationships with local producers that has truly shaped his philosophy towards food and dining. As a Richmond transplant, Chef Kostandin is currently the Chef and director of operations at Natalie's Taste of Lebanon. Paul and his wife, Kathleen own and operate Fancy Boy Food Co., a lifestyle blog focused on sharing their over 25 years combined restaurant and event experience with the world!
