Collect Innovative Spirits from Empirical Spirits Created by Noma Alums
After honing their skills at Copenhagen's iconic restaurant noma, Lars Williams and Mark Emil Hermansen launched Empirical Spirits in 2017. With an overarching belief in the empirical method - that knowledge is gained from experiences and gathered using our senses - and a desire to explore the world around them, the duo employs a blend of fermentation, low temperature vacuum distillation techniques, and global ingredients to create new innovations in spirits and beyond. You'll get to take home a set of their three core products: Helena (a double fermented clear koji spirit made from barley koji, pilsner malt, and Belgian Saison yeast), Fallen Pony (a quince tea spirit made from a base of quince, barley koji, Belgian Saison yeast, and pilsner malt wash), and Charlene McGee (a straw-colored juniper spirit inspired by the Scandinavian culinary tradition of smoking). Enjoy them neat, on the rocks, or in cocktails using recipes from the company's website.
