This homemade Smith Island Cake, Maryland's official state dessert, features delicate layers of yellow cake stacked with rich, decadent chocolate fudge frosting.
The cake dates back to the 1800s, when women on Maryland's Smith Island baked these special layered cakes for their husbands to take along on extended oyster harvests. The many thin layers helped the cake stay moist, while the rich fudge frosting provided a sweet reminder of home.
Traditionally made with eight to ten layers, Smith Island Cake is as impressive to slice as it is delicious to eat. This version is made from a Southern Living recipe and likely to be 6-8 layers and very delicious.
