Scott is 1 of only 22 Certified Italian Wine Experts globally, is a Certified Wine Educator, and official Orvieto and Langhe Wine Ambassador.

Paula Thomas, a talented chef with a passion for regional cooking, crafts beautiful, seasonal dishes that pair perfectly with each pour. Serving as the Sustainability Director at Restaurant Olivia and Dear Emilia, Paula brings a unique blend of culinary excellence and environmental stewardship to every plate. She has worked with Slow Food International, trained at MAD Academy, and was selected for the James Beard Foundation's Legacy Network as an advisor to the next generation of BIPOC hospitality professionals.

Together, they own Grappolo Food & Wine School, and create immersive experiences that blend education, flavor, and fun.
