• Side Project - Saison du Ble Blend 15 (750ml; 6% ABV) combines a fluffy Wheat Saison with a tart Missouri Saison for balance and complexity. Aged in oak for several months and naturally conditioned, it offers a dry yet creamy profile shaped by local microflora.
• Side Project - Smooth 2024 (375ml; 6% ABV) is built on a Missouri Wild Ale base rested and blended Solera-style for nearly 10 years in our oldest foedre. At maturity, the beer was racked onto over five pounds per gallon of California nectarines for expressive depth.
• Side Project - For LC 2025 (375ml; 15% ABV) is a barrel-aged Missouri Imperial Stout brewed with pistachios, pistachio flour, cocoa nibs, and vanilla beans. Rich and layered, it balances nutty sweetness with deep chocolate and barrel character.
• Side Project - Le Saisonnier (750ml; 15% ABV) is a table Saison inspired by the seasonal workers for whom the style was originally brewed. Made with European malts and hops, then aged six months in a Missouri oak foedre with local microflora, it delivers a delicate yet expressive experience.
