About Liz

Liz is a board Certified Specialist in Sports Dietetics who specializes in elite endurance athletics. She completed her undergraduate degree in dietetics and kinesiology at the University of Rhode Island, where she competed on the sailing team and worked as a research assistant on energy balance, body composition and exercise metabolism studies. Liz attended San Diego State University from 2011-2014 to pursue masters' degrees in nutrition science and exercise physiology. There, she conducted research in carbohydrate metabolism, taught food science and began working with Team USA athletes and staff as a graduate assistant. After acquiring her RDN credential in April 2015, Liz returned to the USOPC as a consultant to seven sports (rowing, triathlon, cycling, archery, men's rugby, canoe/kayak and pentathlon) leading up to and throughout the Rio Olympic games. She joined the staff of USRowing as their first full-time sports dietitian in the Fall of 2016 and supported the team at the Tokyo Olympics. She has also been supporting OKCHP athletes since 2017.
