A group of like-minded bar owners started the Houston Bourbon Consortium (HBC) to streamline their resources and bring more bourbon to Houston.

The bourbon is sold at each of their establishments, as well as on retail shelves at two local liquor stores. The retail bottles typically sell out within a day. The Bourbons included are:

• Maker's Mark Private Select First Release (Signature bottle) This blend was tightly modeled after one of HBC founder Morgan Weber's personal bottles of Old Fitzgerald-distilled at the Stitzel Weller distillery in 1965-featuring old flavors like tobacco, persimmon, wintergreen, caramel and butterscotch. The label was hand-signed by HBC members during the selection process.
• Maker's Mark Private Select Second Release - Exactly the same recipe as the first release with a small difference in proof. Unsigned.
• Knob Creek Single Barrel Rye 115 proof
• Copper and Kings Phoenix Barrel Flood Dollar Collaboration - Hand-Picked with our friends from the Silver Dollar. It was coined Flood Dollar in remembrance of the flooding that both of our cities experienced in 2017.
• Wild Turkey Kentucky Spirit Double First - Wild Turkey owns four warehouses in Camp Nelson. This single barrel was the first year that a Camp Nelson-aged whiskey was available in a single barrel. This was the first Camp Nelson single barrel selected for the state of Texas.
