Silver Oak Cellars only makes Cabernet Sauvignon and they make big, beautiful and powerful ones. Their first vintage was in 1972 but the 1974 vintage "marked the first great Silver Oak for its rich, explosive fruit." 85% of the winery's production comes from its Alexander Valley vineyard (just northwest of the Napa Valley). These Cabs were aged in 100% American oak barrels, which features ripe, fleshy, complex fruit that offers anise, olive, black cherry, spice and vanilla notes with a rich, smooth, polished texture. All of these auction vintages, from 1986 to 1990, scored at 90 points or better and are now drinking perfectly after an average of 30 years of aging.

So, throw a fantastic dinner for six to eight people (3-4 ounces of each bottle) with 28-day dry-aged beef and see how well these powerful Cabs stand-up to it. And, as a special treat, compare the two 1970 vintages from both the Alexander Valley and Napa Valley appellations!
