About Chef Chad Matrana
Chad Matrana is the Executive Chef for Loyola Dining Services by Sodexo. Born and raised in New Orleans, Matrana first experienced cooking at a young age while in his grandmother's kitchen. Noting that food has always been at the center of his family.

As a graduate of the Culinary Institute of New Orleans, Matrana comes to the Loyola University Community with over 15 years of hands on experience in the food industry.

Matrana's culinary career has included working at Commander's Palace, The Balcony in Metairie, and most recently the Executive Chef at Amici Ristorante and Bar.

He has had the opportunity to learn and train with Chef Jamie Shannon, whom influenced and inspired him creatively in his culinary work.

Growing up in New Orleans, Matrana is excited to be apart of the Loyola University Community and has brought a new, fresh approach to the Dining program to their campus.
