Jason Hammel is Executive Chef and owner of Lula Café, Chicago's Logan Square community institution and award-winning trailblazer known for its creative, seasonal cuisine. As a regular at Chicago's farmers markets, Hammel was one of the first chefs to source local, organic ingredients and build close relationships with Midwestern farmers. Through his work with the the non-profit food education group Pilot Light, which he founded with several other notable Chicago chefs and in the kitchen at Lula, Chef Hammel seeks to bring community, creativity, nourishment and purpose back to the table.
Chef Matthias Merges runs Yusho, Billy Sunday, and A10. Merges' restaurants offer a culinary-style approach to beverages. In addition to his restaurant work, Merges is a founding member of Pilot Light, a volunteer organization that advocates for child nutrition, health, and wellness.
Chef/Co-Owner of Fat Rice, Abe Conlon's culinary beginning was heavily impacted by his Portuguese heritage and a strong Southeast Asian presence in his community in Lowell, MA. Upon arriving in Chicago, he founded X-marx, an underground experience exploring modern techniques as well as world home-style cuisines. His current venture, Fat Rice, is a return to his roots, focusing on food from modest traditions, prepared with an immense respect for ritual, custom, and technique.
