Calling all Carnivores! Up to eight people are guided through the Art of Butchering by the chefs at Truffles Butchery, the full-service butcher, deli and specialty food store in Ladue. A better understanding of an animal's anatomy helps you develop a sense for which cuts of meat to use in any situation. You might even pick up a culinary trick or two from the chefs during class. While you're there, check out the Himalayan pink salt dry aging room where they cure their own in-house meats. Each couple will take home 20-24 pounds of newly butchered hog. Drinks and charcuterie will be served during class. No if's, and's, or Boston Butts about it, armed with a freezer full of fresh meat, this experience will make you a more conscientious consumer and a better chef. Must be 21 years old to attend.
