"Lomo Saltado" (Sautéed Beef Loin) and "Papas Rellenas" (Stuffed Potatoes), are two traditional dishes that are both representative of Peru's rich cross-cultural heritage. Learn how to make these delicious dishes with CHOICE Humanitarian Peru Director, Wilmer Cruz! Lomo Saltado is a popular, traditional Peruvian stir fry that typically combines marinated strips of sirloin (or other beef steak) with onions, tomatoes, french fries, and other ingredients; and is typically served with rice. The dish originated as part of the 'chifa' tradition, the Chinese cuisine of Peru, though its popularity has made it part of the mainstream culture. Peruvian Papas Rellenas usually consist of a potato based dough filled with a stuffing made out of beef, onion, cumin, and other spices. It originates during a time when French cuisine had great influence in South America. Engage in this intercultural exchange with the people that make CHOICE great and the food they love! INCLUDED:

The goal of the CHOICE Jr. Board is to bring together students all across the Wasatch Front and give them an opportunity to become involved in humanitarian skills while also getting experience in leadership positions. As of now, there are eleven members on the CHOICE Jr. board. Every year the Jr. board creates many small projects to create revenue for CHOICE as well as an end of the year festival to raise scholarship money for students in specific villages where CHOICE works.
