The menu is crafted around local products, showcasing the best of Sonoma County, seasonal fish, and sustainably raised meats along with produce grown on their estate farm. Chef and co-owner, Dustin Valette, honed his craft in some of the most celebrated restaurants on the West Coast. Before opening Valette in 2015 with his brother, he spent six years as the as Executive Chef of Dry Creek Kitchen, a Charlie Palmer restaurant.
