78% Zinfandel, 12% Syrah, 5% Carignan, 5% Graciano

A classic and beloved blend in the Linne Calodo collection, this dry farmed Zinfandel does not disappoint. As your nose approaches the glass, you can almost imagine a smoked cherry cobbler cooling inside. Wild black raspberries, late summer tomatoes, and roasted fennel are all there on the pallet, with a bright red fruit pop in the mid pallet to keep you on your toes. Enjoy now through 2028. Maybe longer. Linne Calodo Zinfandel does not seem to know how to get old.

Pairings: Hickory Smoked Brisket, Beef Ribs, Cajun Spiced Shrimp Grits, Caramelized Pineapple with flaked sea salt, herbaceous cheeses like Laguiole or Pecorino Romano.

2018 In My Dreams
58% Grenache, 18% Tempranillo, 12% Graciano, 6% Tannat, 6% Carignan

This is one of those wines you can never pin down as every sniff and sip brings another flavor, another revelation. Dark ripe nectarines, grilled blood orange, macerated strawberries, graham cracker, vanilla meringue, a perfectly cooked steak's iron minerality, too many notes to include. Somehow the wine manages to be so round as to fill every corner of your mouth, and yet so smooth that it feels like silk on your tongue. Light and bright, while also dense and complex. Drink it immediately or wait to see the layers develop and progress. Enjoy now through 2028.

Pairings: Elk Medallions, Duck Confit, Penne Norma, Carnitas Tacos (or make them with Jackfruit!), dry flakey cheeses like Mimolette.

The richness of this wine demands a dish of equal depth. Gamey meats like elk or duck play against the layers of fruit and pull out the iron minerality. Tomato based dishes will have their natural acidity soothed by the mouth filling nature of the blend. And a little spice will complement not clash, so don't be afraid to level up your Taco Tuesday.

2019 Nemesis
77% Syrah, 20% Grenache, 3% Tannat

A celebration of our Syrah this wine invokes the rich dark velvety texture Paso is known for. Or perhaps this wine, first made in 2001, is what all those other wines are striving for?
The spice box in this wine is wide, from pipe tobaccos to a pfeffernusse christmas cookie. Quince, sugar plums, strawberry rhubarb pie; all the fruit is there as well. As it ages, the wine will move further into brooding and dark flavors, molasses and sausage in the same sip. Drink with a decant now through 2027 or wait for those darker flavors to take hold 2027 through 2037. You will need more than one bottle.

Pairings: Mole Beef Chili, Sous vide Beef Ribs, French Onion Soup, Grilled NY Strip, soft rich flavored cheeses like Red Hawk or Epoisses

Start to think of winter and the many family meals to be shared. A rich chili, like one made using the James Beard Burger technique of adding heavy cream to ground beef and embracing classic mole spices, is only made more warming when paired with the spice and deep fruit of Nemesis. 2018 Red Wine "Right Bank Blend"

"The 2018 Right Bank Blend is a blend of 47% Cabernet Franc, 26% Cabernet Sauvignon, 26% Merlot and l% Petit Verdot, aged for 20 months in French oak, 75% new. Deep garnet- purple in color, it rolls effortlessly, seductively out of the glass with gorgeous scents of lavender, lilacs and baked black cherries, leading to a core of kirsch, warm cassis and chocolate box plus a waft of bouquet garni. The full-bodied palate delivers bright, crunchy fruit, supported by fine-grained tannins and great tension, finishing long, lively and mineral laced. 459 cases were made."

2018 Cabernet Sauvignon "Black Label"

"Made from 100% Cabernet Sauvignon, the 2018 Cabernet Sauvignon Black Label is deep garnet-purple in color and features wonderfully pure, vibrant notes of fresh, ripe blackberries, red and black currants and boysenberries plus suggestions of violets, dark chocolate, unsmoked cigars and pencil shavings. The medium to full-bodied palate coats the mouth with lively black and red fruits, supported with ripe, grainy tannins and bold freshness, finishing long and earthy. 279 cases were made."
