Woodford Chocolate Malted Rye, 750 ML signed by Master Distiller Chris Morris -look for a nose of "soft mocha, delicate caramel and roasted nut notes mingle[d] with hints of cedar, soft oak and a touch of fruit." The palate is said to have "roasted rye grain, dry cocoa nibs and dark chocolate spice up a soft mocha character atop a layer of cherry fruit and toasted oak," and the finish will be "long and chocolatey."
Woodford Chocolate Malt Whisper 375 ML-Bright red apple is unmistakable at the beginning, accompanied by cedarwood. In the next wave, cinnamon and spearmint come through, but the spearmint feels out of place compared to the fruitiness of the dram. Toward the end of the nose is lemon peel and almond extract. Overall, the nose of whiskey reminds me of Cherry Vanilla Coke.
Palate: The whiskey starts with dry espresso and cherry. Lemon peel comes through, as well, which provides that citric acid feel of Cherry Vanilla Coke. Bittersweet chocolate and crème de cacao are abundant. The mixture of natural and artificial chocolate is what creates the sweetness in the whiskey. Almond extract and cedar finish off the palate.

Single Barrel Restoration Rye 2021 (750 ML) Nose-is tame for cask strength with lots of bright, ripe orchard fruit, a grassy wintergreen quality, and Bit-O-Honey candies.
Palate punches with barrel proof flavors but not aggressively so. A rich layer of Demerara sugar saturates secondary flavors of muddled mint, clove chewing gum, and toasted marshmallow. Finish-A bit of mild astringency arrives on the peppery finish before quickly fading to caramel candies and a bit of candied ginger.

Big and brawny on the palate, it pours bold and viscous, the blueberry and blackberry fruit balanced with the sweet-bitter notes of burnt sugar and pipe tobacco. Weller Antique 107 (750 ML) - Sweet and unusual floral notes and coupled with vanilla. The taste is very well balanced with sweet fruit notes, strong vanilla undertone and sharp spicy tones, with a cinnamon finish.

Nose: A wildflower meadow showing dandelion, nasturtium, and fennel. The floral qualities are intense and concentrated. Late summer fruits round out the profile, among them Rainier cherry, watermelon, and crushed apple. It all integrates seamlessly with aromas of fresh oak, cedar, and applewood, with just a hint of char. The overall impression is that of splitting wood out in the yard when the trees are laden with fruit and the flowers haven't yet begun to fade.
Palate: Cinnamon rolls arrive with rich, buttery brioche dough, gooey caramel, and a spicy kick of cinnamon. The spice quickly expands to include wasabi and ginger. It's underpinned by a savory undertone of boiled peanuts, and French butter.
Finish: Quite crisp, with an initial burst of sea spray and lemonade. These fade to reveal lingering notes of raspberry eau-de-vie and pastis.
Barrell Vantage - Bourbon whiskey finished in Mizunara, French and toasted American Oak.
Nose: Creme brûlée, coconut oil, and chocolate pudding invoke the creamy richness of toasted American oak. Tarragon, nutmeg, and warm cola are among the dry, extractive spices highlighting the French oak. Mizunara's incense and grilled pineapple notes, meanwhile, take the profile in a totally different direction.
Palate: Sweet and oily with a pronounced espresso note. It's pleasantly rich on the tongue, which obscures much of the tannin - surprising given how much wood is present. The French oak's robust spice notes inflect a maple syrup sweetness.
Finish: Green grapes and red plums burst above the barrel notes for the first time. It's spicy, too, with za'atar, crystallized ginger and Szechuan peppercorns.

Nose Caramel and gingerbread sweetness gently rise from the glass. A quick swirl reveals apricot and a touch of oak, adding a layer of dimension. It's medium to light in overall intensity, and offers a pleasant and inviting introduction to the sip. Palate
Sweet brown sugar and caramel contrast rye spice and burnt oak. The overall impression is characteristically sweet. The delivery is surprisingly gentle considering the proof, and the bourbon is relatively thin. FinishA crescendo of rye spice briefly surges in the finish, with sweet flavors of vanilla, caramel, and gingerbread rushing back quickly. Medium-length, it ends on a sweet note which is consistent considering the rest of the sip.

NOSE: An oaky undertone weaves together with dried vanilla bean, syrup, baking spices and a hint of cinnamon apple. These scents are supported by a pleasant layer of caramel which acts as a good base. While the proof isn't shy about making itself known, it adds just the right amount of ethanol to let you know that this is a barrel proof bourbon. Overall, the aromas are nicely packaged and deliver a great start to the sip. Palate: Large doses of spiced vanilla and baking spices are topped with a touch of burnt caramel. A thread of syrup weaves itself through, adding a touch of sweetness. SE4 x PR5 delivers a spicier palate than you would expect for a wheated bourbon, and in the end the flavors work well together to form a delicious fusion.
Finish: Sweet notes of caramel and vanilla hit for just a second before being almost bulldozed by aged oak and leather. While a thread of vanilla tries to hang on, it just can't keep up with the aged oak and leather. These two flavors can often come across as dry, however here they manage to toe the line just enough to keep them enjoyable.
