About Mimi Hill: Pastry Chef Mimi Hill is a proud native of Boerum Hill, Brooklyn. While earning her AOS degree at New England Culinary Institute in Vermont, she completed internships at The Willard Intercontinental Hotel in DC and The Windsor Court Hotel in New Orleans. Upon graduating, she continued working at Windsor Court, fascinated by the variety of techniques she could learn in a hotel pastry department.
When she returned to New York, she landed a job at the legendary Bouley with Bill Yosses (who later went on to become Chef of the White House). Other places of note in her career are Union Square Cafe, Home, and Gramercy Tavern - as Claudia Fleming's Sous Chef. Mimi is currently a Crown Heights dweller and is working towards owning her own pastry shop.
