Cumin Garlic Chicken, Baked Asparagus, & Cilantro Lime Rice
Instant rice & water
Parmesan cheese (shredded)
Pepper jack cheese (sliced)
Spices (cumin, garlic powder, salt, & pepper)
Warm a cast iron skillet over medium-high heat.
Sprinkle the spices (to taste) over both sides of your chicken.
Prepare the rice - follow directions on the back of the box for your preferred serving size
Wash and mince the cilantro. Break the ends of the asparagus off.
Place minced garlic and chicken into your cast iron skillet. Turn heat down to medium.
Allow chicken to cook roughly 4 minutes each side. Move chicken to a new cast iron skillet and cover in pepper jack cheese. Bake at 350 degrees until the internal temperature of the chicken comes to 165 degrees.
Drizzle olive oil, salt, pepper, garlic powder, and parmesan cheese over your asparagus.
Turn the oven to broil and place asparagus on the top rack. Allow asparagus to broil for 6 minutes.
When rice is done - add lime juice, salt, pepper, and cilantro (all to taste). Stir until combined.
