Phoenix Station 11 - Oyster Mac & Cheese

Oyster Macaroni & Cheese 





1 lb Bacon Crisply Fried and Chopped
2 Cups Raw Oysters (rinsed and chopped)
1 1/2 Cups Grated Cheddar Cheese
1 1/2 Cups Shredded Fresh Parmesan Cheese
1/2 Diced Sweet Yellow Onion
6 oz Can of Tomato Paste
2 Tablespoons Oregano
8 oz Creme Cheese
15 oz Queso Fresco
1 lb Elbow Macaroni Cooked Al Dente
3 Cloves Crushed Fresh Garlic
8.5 oz Jiffy Corn Muffin Mix
9 oz Chopped Spinach


Blend Queso Fresco and creme cheese. Simmer onions till soft, add tomato paste, oregano, garlic. Tumble oysters together with enough Jiffy Corn Muffin Mix to coat them. Toss the rest of the ingredients into the cooked macaroni and gently mix. Heat oven to 325 and distribute in individual iron skillets or a casserole dish. Sprinkle top with blend of cheeses and bacon. Bake for approximately 20 minutes.
