Tri-Tip Sammy's & Parmesan Cheese French Fries




Spade L Ranch Marinade Seasoning 

Sliced pepper jack cheese

Red onions


Russet potatoes

Chopped garlic (7-10 cloves) 

1 stick of butter 

Olive oil 

Canola oil 

Shredded parmesan cheese 

Salt & pepper (to taste)


Set your tri-tip on the counter and allow it to come to room temperature. Sprinkle seasoning on all sides and allow it to marinate. 

Preheat your oven to 425 or 450 degrees. 

Cut your red onion into thirds and set into an oven-safe pan. Place the tri-tip on top of the onions (fatty side up). 

Put tri-tip into the oven on the middle shelf. Allow to cook for 15-20 minutes. Internal temperature should come to 110-120 degrees.

While the tri-tip is cooking, slice the potatoes into thin, uniform slices. Heat canola oil in a large pan over medium-high heat. Carefully place potatoes into the oil and allow them to fry until they are brown and crispy. 

Place butter and garlic into a microwave safe bowl. Microwave until butter is melted. Add a dash of olive oil.  

Move the tri-tip to a grill over medium-low heat and allow to cook until internal temperature comes to 135 degrees. 

Move the fries to a cookie sheet and pour butter/garlic mixture over the fries. Top with shredded parmesan cheese and salt/pepper. 

Bring the tri-tip inside, allow it to rest, and cut against the grain.  

Slice the onions into smaller pieces. Put pepper jack cheese into the bottom of the rolls, and top with sliced tri-tip, onions, and more pepper jack cheese. 

Put sandwiches into the oven until the cheese melts. Enjoy with your parmesan fries!
