Mesa Station 208 - Bacon Cheeseburger Meatloaf

Smoked Bacon Cheeseburger Meatloaf with BBQ Onion Compote





1 onion - diced

16 pieces of bacon - sliced

4 pounds ground beef

4 eggs

1 cup breadcrumbs

1/2 cup milk

2 tablespoons seasoning salt

2 teaspoons garlic powder 

1 teaspoon black pepper 

4 cups cheddar cheese 

Optional BBQ-Onion Compote:

2 cups onion - diced 

1/2 cup apple cider vinegar

1/3 cup dark brown sugar

1/2 teaspoon garlic powder

1 teaspoon chili power

Salt & pepper (to taste) 

Optional meatloaf topping

1/2 cup ketchup

1/2 cup yellow mustard

1/2 cup BBQ sauce 



Sauté the onion and bacon in a large saucepan until bacon is fully cooked. 

Add this mixture, along with remaining meatloaf ingredients, to the ground beef. Stir until fully combined. 

Form this mixture into 2 loafs and place in an oven or smoker safe pan. 

To make in oven: Preheat oven to 325 degrees and cook for approximately an hour and a half. 

To make in smoker: Preheat smoker to 325 degrees and smoke for approximately an hour and a half. 

Combine ketchup, mustard, and BBQ sauce for the optional meatloaf topping and spread over the meatloaf when there is 30 minutes left in the cook time. 

To make the BBQ onion compote: Combine all compote ingredients in a large pot. Bring to a boil and simmer over low heat for 20 -30 minutes. Allow mixture to cool to room temperature. 

When the internal temperature of the meatloaf has come to 165 degrees, take it out of the oven or smoker, let it rest for a few minutes, slice, and top with the optional BBQ onion compote. Enjoy!
