Tomato Pie
Ingredients:
1 pre-made pie crust sheet
2-3 Tomatoes
Fresh Basil
Feta Cheese
Mozzarella Cheese (approx 2 Cups)
Monterey Jack Cheese (approx 2 Cups)
Cracked Pepper
Sea Salt
- Thaw and prepare a sheet of pie crust (I prefer Pillsbury). Pierce a few fork holes on bottom and pre-bake until barely golden brown. Take out of oven.
- Slice tomatoes and pat each slice dry with paper towels.
- Layer pie filling starting with tomatoes, season to taste with salt and pepper and cheeses in desired amounts.
- Repeat. Top with cheese.
Bake at 350 until cheese is melted/bubbly and crust is golden. Garnish with fresh basil.
Slice and serve! Great as an appetizer with wine! Savory and delicious anytime.
