Easy Holiday Fruitcake

Yields 7 small loaves

1 - 29 oz jar of Cross & Blackwell mincemeat
1 - 14 oz can sweetened condensed milk
2 jumbo eggs, beaten
1 - 6 oz container candied red cherries
1- 6oz container candied green cherries
1 - 6oz container candied pineapple
1 cups pecan halves
½ pound chopped dates
2 cups sifted flour
1 teasp. baking soda


In a large bowl, combine mincemeat and condensed milk. Stir in beaten eggs, then fruit and nuts. Sift flour and baking soda into mixture. Stir well. Coat loaf pans with nonstick spray. Spoon in batter and bake at 300 degrees for one hour.(less if using small loaf pans) Test with toothpick to see if additional cooking is necessary (up to 10 minutes) Wrap and refrigerate.

I make these in the small loaf pans and wrap to give as Christmas gifts.
