This sake was matured alongside and chilled by a massive amount of snow stored in the same insulated room, known as the "Yukimuro". This method of storing food at low temperatures, using the abundant snow provided by nature, has been used traditionally in the snowy region of Uonuma, Japan for centuries. From the cold of the snow alone, temperature is naturally kept stable at 3 degrees Celsius without the use of electricity. After three years, the sake becomes round and very smooth. It has a full nutty and earthy nose that smells slightly astringent. What comes next is a flavor forward rush of butterscotch and walnuts nestled in a solid acidity that brings a warm and thick texture to all the recesses of the mouth. This Junmai shimmers and plays very round in the corners of your mouth, and leaves a lasting and splendid tail that is more thick than sizzle.
