Sommelier Blackjack: Learn how to "count cards" and beat the house when dining at a restaurant. Whether a novice or an expert, guests will learn how to find the hidden deals and gems in wine lists and learn what wines and grapes to avoid at your next business meeting, date, or social dinner.
The class, held for 8 to 10 people at Calissa, includes prizes, Q&A and insider insight about how restaurants select and mark up wine and how to use that knowledge to buy better wine at a lower price. It is lead by managing partner and former stand-up comedian James Mallios.
Scheduling
Off-season: scheduled in advances but generally offered on weekends.
In-season: preferred days are Thursday, Friday, and Sunday.
Blackout dates: Memorial Day, July 4, Labor Day weekends. Other dates based on availability.
Timing and reservations subject o a la carte and private dining reservations. The talk starts between 5:30 and 6:30 pm.

2008: A Champagne Miracle
2008 was dominated by grey, overcast skies - just when the harvest was getting underway, the weather conditions were finally perfect: blue skies and prolonged north-northeasterly winds. The grapes were riper than anyone dared hope, and had truly outstanding balance. To the bracing acidity, concision and aromatic purity expected of the 2008 vintage, Dom Pérignon added depth, density and complexity.
On the Nose
The opening bouquet is complex and luminous, a mingling of white flowers, citrus and stone fruit. The overall effect is enhanced by the freshness of aniseed and crushed mint. The final aromas reveal spicy, woody and roasted notes.
On the Palate
There is complete balance between the nose and the palate. Its slender, minimalist, pure, toned and athletic character is also expressed with warmth. The fruit is pronounced and clear. The vintage's characteristic acidity is remarkably well integrated. Its persistence is mainly aromatic, grey, smoky and highly promising.
Food Pairing
The wine enjoys duality: warmth & freshness, meat & fish pairings, cooked & raw. Spices enhance and accentuate 2008's effervescence and densify the wine.
