The 23-year-old Pappy Van Winkle is the standard to which other Bourbons are measured. The 2016 release is one of the most sought-after vintages of the Pappy Van Winkle line-up. It is bottled at 95.6 Proof. When enjoyed neat, there are huge notes of dry, tannic oak, worn leather, and dark cocoa. Pappy Van Winkle's legacy began in 1893 when Julian "Pappy" Van Winkle Sr. entered the bourbon business as a traveling salesman before acquiring the W.L. Weller wholesale firm and Stitzel Distillery, which became the renowned Stitzel-Weller Distillery. Known for his commitment to quality and innovation, Pappy pioneered the use of wheat instead of rye in the bourbon mash bill, creating a smoother, softer spirit that became a hallmark of the Van Winkle brand. Despite Prohibition, the family preserved its bourbon legacy, and subsequent generations continued producing Old Rip Van Winkle and, later, Pappy Van Winkle bourbon.
