The first planting on what is now the J. Davies Estate Vineyard was in 1862 by Jacob Schram, representing the Napa Valley's first hillside vineyard. This and the J. Davies Estate McEachran Vineyard are the southern most vineyards in the Diamond Mountain District AVA. Flanked by two cool creek canyons, Nash Creek to the north and Ritchie Creek to the south, and surrounded by dense coniferous and deciduous forests, these vines produce late-ripening, richly concentrated fruit.

Initially, the Davies planted their estate vineyards to the traditional Method Champenoise grape varieties in 1965. But over time, it became apparent that this land was better suited to the cultivation of red Bordeaux varietals.

Today, building on the knowledge gained from producing the J. Davies Estate Cabernet Sauvignon from Diamond Mountain, our collection of Cabernet Sauvignon explores new Napa Valley vineyard sites. Each vineyard site provides the winemaking team unique flavor characteristics from the varietal, allowing them the opportunity to produce a wine that is strikingly different than the J. Davies Estate wine while still delicious and singular to the vineyard or appellation from which it came.

We love all the rituals of champagne, from the release of the wire cage to that first effervescent pour. But the most exciting ceremony is the traditional art of sabrage, using an authentic saber to open a bottle of sparkling wine.

The legend behind sabrage is connected to The French Revolution when Napoleon, a noted fan of Champagne, would take victorious rides through the countryside. As he and his cavalry passed through the towns, villagers lined the streets to toss them bottles of Champagne in celebration. Unable to open the bottles by hand from their horses, the soldiers simply struck them open using their sabers.

In the Breathless sabrage experience, receive one-on-one instruction from our experienced guide who will teach you the proper technique of opening a bottle of Champagne using impact from a saber. You'll also receive that same bottle of Breathless Sparkling Wine, newly opened by your own hand, to enjoy on the property.

Enjoy a tasting of 5 Byington wines during your tour of Byington Vineyard & Winery. Your tour guide will escort you into our Estate Vineyard where, with a glass in hand, you and your guests will learn about Byington and the Santa Cruz Mountains. You also will tour our production facility and unique wine cave. During the tour, your guide will present you with a selection of current releases. Tasting and tour time is approximately 45 minutes.
