The dough used to make New York bagels is made from high-quality ingredients - At Abel's Bagels, Nick uses many organic ingredients to craft his proprietary dough before hand-rolling and forming the bagels. After the bagels are formed and proofed, they are cold-proofed for 12-40 hours to develop deeper flavor and character. After cold-proofing, the bagels are boiled in water before being baked in a 450 degree oven. The combination of the high-quality ingredients, hand-rolling, precision proofing, and the boiling and baking process, results in a chewy texture on the inside and a crispy crust on the outside. Additionally, the high-gluten flour gives the bagels a distinct flavor and a satisfying chew.
