This beef from Paloma Dairy is not only naturally and locally raised by the Van Hofwegen family but also harvested from a strategic cross breed of Angus and Holstein. This cross is known for its combination of the tenderness of Holstein with the flavor profile of Angus. A side of beef typically includes 250+ pounds of beef, including more than 40 steaks, brisket, tri-tip, other premium cuts, and ground beef.
