SENSORY COMMENTS

Appearance: Brilliant, golden

Aroma: Rich lemon, apple, and lime

Taste: A firm, full-bodied wine exhibiting wonderful lemon, lime, and citrus flavors. The finish lingers through supple oak tannins and cream; hints of vanilla


GENERAL NOTES ON PROCESSING

Grapes: 100 % Chardonnay, Lockwood Vineyard, Reserve Block, Monterey County.
Grape Maturity: Harvested in October. 4 degrees Brix.
Fermentation: Grapes were pressed, cold settled for two days, and then inoculated.Juice was then placed in 100% new French oak barrels from various forests and coopers, and then barrel fermented. Malolactic fermentation occurred to 55%, and then stopped to produce creaminess, yet maintain crispness.
Barrel Aging: The wine remained sur-lie for 10 months in barrels to enhance mouth feel and balance.

SENSORY COMMENTS

Appearance: Deep, intense ruby color.
Aroma: Rich fruit and berry aromas.
Taste: Typical of Dante Dusi Vineyard; rich and jammy, packed with fruit and a
long, lasting finish.



GENERAL NOTES ON PROCESSING

Grapes: 100% Dante Dusi Vineyard, Paso Robles. 80-year-old vines, dry farmed andhead pruned. Grapes picked in 5 separate blocks depending on ripeness, spanning5 weeks. The best of the 5 blocks are blended to create our "Dusi Zin."
Grape Maturity: Harvested ultra-ripe @ 27 to 28 degrees Brix.
Fermentation: Fermented in small 1/2 ton bins and inoculated with Pasteur red andMalolactic culture. Manually pushed down 5 times daily and pressed near dryness. Minimal mechanical treatment.
Barrel Aging: 15 months oak aging in small French and American barrels.

SENSORY COMMENTS


Appearance: Very bright, opaque ruby red with an elegant appearance.

Aroma: Plum, berry jam, tobacco, followed with light vanilla accents and savory notes.

Taste: Chewy with notes of blackberry, chocolate and a hint of leather. Earthy, rustic classic Bordeaux style with great structure.


GENERAL NOTES ON PROCESSING


A 100% Malbec: One small west side vineyard with perfect growing conditions. This vineyard is hand picked and produces a very small lot of intense Malbec harvested 100% for Tobin James.

Grape Maturity: Harvested @ 25.0 degrees brix.

Fermentation: Fermented in small 1/2 ton bins for 5 to 8 days primary fermentation.

Barrel aging: 20 months oak aging in a combination of French and American oak barrels.
