I miss trying all the chilis at SoNo fest, and I regret that I can only make one pot at a time. This flavorful delight takes away a little of the pain. I hope it keeps you warm this winter!

Pork Chili Verde
Ingredients:
2 lbs pork stew meat
2 Tbsp bacon fat
1 yellow onion, chopped
3 cloves garlic, minced
1 lb tomatillos, quartered
1 Pasilla chili, chopped
1 jalapeno chili, minced
1/2 cup chopped cilantro
1/2 tsp Cumin
1 tsp dried Oregano
Salt and pepper
Water or broth
Method:
In a large pot, brown pork in the bacon fat and then move it into a bowl.
In the same pot, sautée onions, garlic, and peppers with salt, pepper, cumin, and oregano. Add tomatillos, cilantro, and browned pork. Add enough water or broth until it is just covered. Bring it to a boil, and then turn it down to a simmer and put a lid on the pot. Simmer for at least 2 hours, or until dinner time. The meat should break apart easily.
Serve with rice, black beans, and tortillas. Garnish with sour cream and avocado, and savor the meaty goodness in every bite.
